We sell three distinctive flavours: Grey Ironbark, Eucalyptus Siderophloia (Spring flowering) This light amber honey is high density with a very sweet ironbark flavour. Blue Gum, Eucalyptus Tereticornis (Winter flowering) A dark amber honey with a rich caramelised flavour. Tea Tree, Melaleuca Quinquenervia (Autumn and Winter flowering) Derived from paperback forests, this honey is a dark amber colour. It has a rich and slightly sharper flavour than our other flavours and will candy when kept in cool conditions. Our honey is: locally sourced unblended so it retains the distinctive varietal differences not exposed to excessive heat that denatures natural enzymes only coarse strained to retain pollen not subject to use of antibiotics low carbon footprint
